Yes, the riper the banana the sweeter it will be, the banana caramelizes when cooked, much like fried bananas, they're really delicious... my wife suggested I sprinkle some cinnamon on them, so next time I'll give them a light sprinkle...
Also, you could add walnuts to the batter for some crunchy texture, walnuts are an excellent food source, banana walnut pancakes without flour, how good that sounds...
You could also pour the batter into a cupcake tin and make several cupcakes and bake probably for 12 to 15 minutes... I'm going to try that this weekend, that should be fun, also...
