OH yes I am also a fan of the Instant Pot. We got ours almost a year ago. All the guys in my office are foodies to some degree, and all have them. My sister-in-law put one on her Christmas list, which my wife bought for her. Since Christmas my mother-in-law also got one. I convinced my sister to get one last fall and she also loves it, we are working on convincing my brother to get one.... Some people use it daily but it sees occasional use in our house, typically every few weeks or so.

Just a few days ago I made Shrimp Coconut Curry from the Indian Instant Pot Cookbook. And yesterday my wife debated to either use the Instant Pot or the BBQ to cook a whole chicken. As it was not too cold out, we had beer can chicken done on the BBQ. We typically use ours to do a roast or pulled pork. When we first got it I used the timer function to wake up to fresh cooked oatmeal but usually I just go with the Quaker steel cut oats that need only 3 minutes in the microwave. Our first recipe was Kalua Pork from the included recipe booklet.

Here is one of the recipes I tried. I like Indian food but was too spicy for the kids to eat.... more for me I guess. It was delicious enough to make twice:

There are a few other recipes that are on my radar, many years ago my wife had french onion soup at a restaurant and bought the bowls to make it but they have never been used so I have this one earmarked:

Most of my co-workers have the lndian Instant Pot cookbook. One says he will try all the recipes in the book, and his family went wild at the wondrous smells when he cooked Pork Saag and the IP released its pressure into the kitchen. Another had many tomatoes from his garden and very highly recommended the Coconut-Tomato Soup. Another was regularly making yogurt with his IP.

Would be very interested to trade recipes and find out how others are using their IP.
