Seafood can work too I suppose, one of the people I work with threw a possibly frozen salmon steak in the Instant Pot and said it turned out great? Not sure what all else he may have added.

The shrimp recipe was slightly undercooked and needed to go back in again, probably because I didn't follow the recipe quite right with the trivet and too much water. The recipe calls for 1 lb of shrimp, shelled and deveined (about 26 to 30 count). It uses a sort of pot-in-pot method, specifying 2 cups of water in the Instant Pot and then put the trivet in the water. The shrimp, spices, and half can of coconut milk go into the bowl. Cover the bowl with foil and then put bowl into the pot. Set the IP to cook on manual setting, low pressure for 3 minutes and then use the quick method to release the pressure.
