For those that don't know what an Instant Pot is, here is a decent summary:

I did my Instant Pot potato and chickpea curry recipe yesterday. The recipe says serves 4 but it makes a LOT! I have 4 serving bowls set aside for lunches this week, plus another larger one to freeze. And I ate a meal's worth also. Turned out delicious but the peas could soften up some, so slow cooking for a few hours yet. Only soaked lentils for about 4 hours so that's probably why. Substituted large can of crushed tomatoes instead of fresh and also skipped the cilantro. Did not have any whole cumin seeds either so skipped those in the saute stage. Used whole package of chickpeas. Also used whole can of coconut milk, no such thing as too much.
