Going to try this today. I do wonder if one could do some replacements?

Cool whip instead of canned whipped cream?

Peaches, or pears instead of banana?

And a question.............. does the final mixture (before freezing) get pretty watery?

I made this the other night.........because we really like dessert...............it was pretty good. We put 2 T cool whip on top just for giggles. ;)

Low Carb Chocolate Ricotta Pudding

3/4 C milk
4 oz cream cheese, softened
Sweetener equivalent to 1/4 cup sugar
3 T cocoa pwd
1/2 t instant espresso pwd
1/4 t vanilla extract (I used 1/2 t)

1. In blender or food processor, combine the ricotta and cream cheese. Blend until smooth.

2. Add the sweetener, cocoa pwd, espresso pwd, and vakinlla extract. Blend until smooth and well combined.

3. spoon into dessert cups and refrigerate at least 1 hour to set.
