Good questions...
First, no, the mixture does not get watery at all, it looks like melted ice cream...
Frankly, I would not use anything but real whipped cream, that other brand is not real cream... they have other ingredients in it and it's just not real... Ready Whip is GMO free and has only those ingredients necessary to make whipped cream, Cool Whip has high fructose corn syrup, I stay away from that...
Reddi Wip: Nonfat milk, cream, sugar, corn syrup, maltodextrin, inulin (chicory extract), cellulose, mono- and diglycerides polysorbate 80, artificial flavors, carrageenan.
Cool Whip: Water, hydrogenated vegetable oil (including coconut and palm oils), high fructose corn syrup, corn syrup, skimmed milk, light cream, less than 2% sodium caseinate (a milk derivative), natural and artificial flavor, xanthan and guar gums, polysorbate 60, sorbitan monostearate, and beta carotene.
BETTER YET, make your own whipped cream using a whisk and a mixing bowl in an ice bath and then sweeten with real raw honey...
Sure, why not, try it with peaches ar any other fruit, just that bananas are naturally sweet and as a starch it helps to bind the deflated whipped cream...
The problem you'll find is using too many different substitutes that you will eventually move so far away from the original recipe that it may not taste anything close to the original recipe...
This doesn't mean you should try different ingredients, but I've already tried many different ways of making ice cream in a simplified way, what I posted is as close to the real thing as I found... so far, anyway...
Interesting pudding recipe, thanks...<g>
