Cauliflower Mac and Cheese
1 small head cauliflower cut into florets (about 5 cups) Olive oil spray 12 oz chicken sausage chopped (optional) 4 garlic cloves, minced 3 T flour (I use Atkins flour) 1/2 C whole milk 1/2 C chicken broth 1 C shredded cheddar cheese 1 C grated Parmesan cheese 4 oz full fat cream cheese 1/2 t nutmeg divided 2 T chopped chives
1. Place the cauliflower florets into a large stockpot, and add 2" of water. Bring to a boil over high heat. Cook 4-5 minutes until fork tender, Drain and set aside.
2. Coat a large skillet with olive oil spray, and place over high heat. Add the sausage, if using, and cook 8-10 minutes, stirring often, until browned and cooked through. Transfer to a plate. Reduce the heat to low, add the butter and garlic, and cook 1-2 minutes until the garlic is fragrant. Add the flour, and cook 1-2 minutes, whisking continuously until a thick past forms. Add the milk, broth, cheddar cheese, Parmesan, cream cheese, and half the nutmeg.
3. Reduce the heat to low, and cook 1-2 minutes stirring well, until the cheese is melted and the mixture is smooth. Stir in the cauliflower and toss well to coat in the sauce. Sprinkle with the sausage, if using, (I put the sausage right in the cauliflower/cheese mixture), and garnish with the remaining nutmeg and the chives.
