slow cooker - cabbage-sausage-and-onions
***************************************************************************** SAUSAGE, CABBAGE & ONIONS Prep time:10 mins Cook time:4 hours Total time: 4 hours 10 mins Author: Diabetic Kitchen Recipe type: Slow Cooker Serves: 8-10 INGREDIENTS 1 TBL butter 1 small head of cabbage, cored and cut into slices (about 2 ½ pounds) 1 large onion, halved and thinly sliced (I used 2 medium size) 1 cup chicken broth 2 tablespoon brown mustard ½ tsp. kosher salt ½ tsp. black pepper 1 pound smoked sausage, cut into 1-inch pieces METHOD • Coat the slow cooker/crock with room temperature butter. • Core and slice the cabbage in one inch slices and then cut those in half. • Trim off the top of the onion slice. Place cut side on cutting board and cut in half through the root. The root will help you keep the onion layers together and much easier to slice in thin pieces. Slice into thin slices.Add the cabbage and onion to the crock. • Mix the chicken broth, brown mustard, salt and pepper. Pour over cabbage and onion, tossing so that the cabbage and onion are well coated with the broth mixture. • Top mixture with sausage. • Cover and cook on LOW for 4 hours; give mixture a good stir, then cook 1 hour more. • This is so good! First of all the statement that it makes 10-12 servings is misleading for me. That is if you want it as a full meal. As a side dish to complement a meal... yes it would make 10-12 servings. As a meal the result would be 3-4 servings and therefore you would multiply the nutritional info .. still multiplying the carbs 3 or 4 still puts it into the 1 to 1.5 carb serving size.
I used my older crockpot slow cooker and the ingredients (mostly the cabbage) filled the container to the hilt... but everything fit. It cooked thoroughly on low for the 4 hours + one extra after stirring. The volume reduced to approximately 1/2 as the cabbage wilted during cooking.... my apartment had a not unpleasant odour from the cooking.
The end result was quite tasty (I ate 1/3 the contents for a meal). I saved the rest for leftovers. The reheating of leftovers degraded the taste somewhat.
Overall as a meal I would give it a 7/10 immediately after it was cooked, 5/10 as first leftover and less if you had enough for a third meal. As a side dish, it would not be too bad ... kinda like adding a sauerkraut side dish to a meal.
