when i have eggs, i generally have bacon
as well, so, i'll fry the bacon first, then slice
some kale very thinly and braise it in the
bacon fat before adding scrambled eggs

i remove the egg/kale mixture while still wet,
top with some shredded cheddar and place
in the microwave until the cheese melts,
usually 20 seconds. that finishes and puffs
up the eggs nicely as well. serve with bacon.

otherwise i'll fry in coconut oil or butter. now
i'll add lard to my pantry.

i use avocado oil and ACV for my salad dressing
avoiding olive oil since i read this book.
