There is a very easy way to deal with this: Use energy intensive chemical processing (think manufacturing fertilizers for example) by making plants that only run as peaking loads. The cost then is simply how much infrastructure cost is needed to account for the fractional run time rather than running continuously. View that infrastructure cost as somewhat analogous to a battery, but rather than recovering it, you are using it beneficially at the time. Another example would be desalination plants.
