You mean run the desalination plants and/or fertilizer plants or whatever when the sun is shining and/or the wind blowing and not otherwise?

That would seem to be an inefficient use of the plant. Also if you want to get a solar and wind relatively high as a percentage of all production, it wouldn't matter all that much. You would have to cover all the normal electricity demand not just these special cases.
