Haven't tried it yet. Ayib sounds a lot like cottage cheese, but I'm interested in the difference in taste since Ethiopians apparently prefer to make Ayib themselves of instead buying regular cottage cheese from the store.

I got my information from a woman I know at a Braums ice cream store that's regional, but they also sell other dairy products. She told me about one woman that came in and wanted to special order 50 half-gallon jugs of buttermilk to make cheese for a wedding she was planning for her daughter. She also told me Ethiopians were constantly buying buttermilk in general to make this special cheese with.
