Well.............if it doesn't taste oystery (is that a word???), then I'd be willing to try it. ;)

I saw black bean chicken with peppers, onions and celery in the deli section of my local Safeway today, and did it ever look good. So I found Black Bean Sauce at my local store further up valley (with lower sales tax), and although I didn't buy it today, I will eventually.

Oyster Sauce

Oyster sauce describes a number of sauces made by cooking oysters. The most common in modern use is a viscous dark brown condiment made from oyster extracts, [1] [2] [3] sugar, salt and water thickened with corn starch. Some versions may be darkened with caramel, though high-quality oyster sauce is naturally dark. [4] It is commonly used in Cantonese, Thai, Vietnamese and Khmer cuisine.
