Ooh yes, chicken with black bean sauce is good! You can make it so quickly. There is something therapeutic about taking out the chopping board and then smashing up cloves of garlic with a Chinese cleaver to remove the skin lol!
Here are the details:
1. Roughly chop about 5-6 cloves of garlic.
2. Rinse 2 tablespoons of fermented black beans and add to the garlic on the chopping board. Chop the entire mixture some more.
Voila, your own black bean mixture:) If you prefer more garlic taste, just increase the amount of garlic used.

3. Slice chicken, marinate with a touch of soya sauce, wine.
4. Stir fry (or steam as I prefer) the veggies, then drain and save the water.
5. Heat oil, stir fry chicken. When chicken is lightly browned, add black bean mixture and continue stir frying.
6. Add veggies to chicken, stir some more. Add a bit of the veggie water into the pot.
7. Take 1/4 cup of the cooled down veggie water, add 1 tbs of corn starch, stir to create a smooth slurry and add to the pot. Keep stirring and your sauce will thicken nicely.
