Easy...........I'm going to try them.

These are the buckeyes I make..........very similar, but no cooking, and chunky would be good.

Buckeyes

1 C no-sugar added peanut butter
1/2 C butter softened
1 1/2 T honey
1/3 C plain protein pwd
2 T ground flax seeds
1 t vanilla extract

Chocolate coating

4 oz unsweetened baking chocolate chopped
2 T butter

1. Place the peanut butter, butter, honey, protein pwd, flax seed, and vanilla in a stand mixer, and blend until smooth.

2. Line a tray that will fit into your freezer with wax paper or parchment. Using a soup spoon to scoop the peanut mixture, make 24 1" mounds. Transfer them to the prepared tray, and freeze for 30 minutes.

3. With we fingers, roll into balls. Return to the freezer on a separate plate while you prepare the chocolate coating. Reserve the tray with the wax paper for the dipped buckeyes.

4. Insert a toothpick or fork in the center of each peanut butter ball, and dunk in the melted chocolate.

5. Return the dipped buckeyes to the wax paper-lined baking sheet. Repeat with the remaining buckeyes. Keep refrigerated until ready to serve. You can also freeze in an airtight container for up to 6 months.
