Vegetarians practically live off legumes. I looked it up though and lectins are even in tomatoes.

My son is basically a pescetarian and the only meat he eats is fish.

He also avoids dairy by itself, but will make exceptions for things cooked with milk, egg, or has cheese like pizza. <g>
