Oh that sounds like a great recipe. Did you grow the sunchokes or buy them?

I got a few plants from my dad about 5 years ago. They look like 6' tall daisies that bloom in the fall and we harvested so many sunchokes but didn't know what to do with them. The plants became invasive in the backyard and it took my kids almost 2 years of digging to remove the last of them lol!
