It's actually like having an apple... in Europe, the potato is considered an apple grown in the ground instead of on trees...

And believe it or not, if you reheat the potato and then let it cool down a second time, you further increase the resistant starch and increase the fiber...

I've gone a 24 day with nothing but cold precooked potatoes, I have all I want, they're very filling, and I'll lose 2 pounds in 24 hours from that alone...

I suppose you do have to develop a taste for cold potatoes, but they're extremely healthy... sure, adding a touch of mayo which is also zero carb would add to the flavor... it's like homemade potato salad without all the commercial crap in it...
