Well, we already know that already cooked and then cooled potatoes and rice is starch resistant... until we see credible evidence regarding rewarmed already cooled potatoes and rice the jury remains undecided...

I suppose warming the food slightly might be a compromise, but who knows at what point temperature has its potent effect on the molecular structure of these foods...
