In 2005, because of chronically high, unhealthy blood pressure, and my research, I went on a Insulin Resistant diet. Insulin Resistance is a pre-diabetic condition that is caused by a diet too high in carbs. The body produces extra insulin in order to counter the excessive carbs, and over time one's body starts rejecting the extra insulin, and the pancreas keeps increasing the amount of insulin produced, eventually weakening and tiring out the pancreas. Insulin is a wonderful, effective hormone but in excess it is more like a poison in the body which can cause all kinds of mayhem! I'm not a medical professional, so I did the best I could with my explanation. :) I drastically cut back my carbs and consumed almost only low glycemic carbs. Over the years, I was able to "gradually" consume more carbs, but it took years for my pancreas to partially recover. I've never taken insulin. But... even today, after being on an Insulin Resistance diet since 2005, I can't eat fruit, or pasta, or potatoes, or rice; and am still limited in the carbs I can eat. I basically eat three medium romaine salads with one tablespoon home made honey mustard dressing, two eggs, two bowls of high fiber cereal (1/2 cup), two slices mild cheddar cheese, some plain yogurt and two fiber bars per day divided into five meals. At 74, my health has never been better, but I miss my days of gluttony and beer and constant snaking.
