Ok- this is such a winner recipe (https://www.kingarthurflour.com/recipes/blueberry-breakfast-cake-recipe). Loved by all. I added lemon flavoring this time- and it's even better (I did lemon AND vanilla- with a lemon sugar sprinkle at the end- instead of cinna sprinkle)

DO use ricotta. I can't imagine this would be as good with cottage cheese- and I read the comments- some people said the curds sank to the bottom. Not sure how that would happen- but definitely, if you do this, use Ricotta- and I just use all Strauss organic whole milk plain yogurt- fabulous silky texture to the batter, but it's nice and solid- blueberries float on top, as they should. It's quite a little stunner of a breakfast cake- and if you put it in a pan with a removable bottom you could plate it quite nicely. I am just cutting it up in squares and putting it in baggies for people to take with them to work in their lunches- but it would be quite lovely on a buffet table.

As I had rather a lot of Strauss yogurt I'm also making a honey yogurt yeast bread- I'll give you all the recipe if it turns out. If not, it was a noble experiment.

Tomorrow- cottage loaf!
