For anyone looking to get more life out of old iPods, here is a site that sells adapters and tools that allow for using flash memory cards to increase the storage capacity of old iPods substantially. They will even allow syncing through iTunes as usual.

I found this site through eBay, people sell old iPods modified with these adapters and make a nice profit doing so.

You can even go well beyond the original limit of the iPod Classic at 160GB by installing up to 1TB of flash memory using software called Rockbox to modify the firmware on the iPod. That has the added benefit of replacing the spinning hard drive in the iPod Classic, which should increase battery life and make it immune to the problems hard drives have.

There are also guides at iFixIt that will help with opening old iPods.
