Mostly we just had strings of dough with big holes.

Really, really, really. It's just like making bread dough, no big deal. (Some recipes suggest the addition of a little oil.) The problem is cooking it. My own efforts came out much too biscuity. Should be a bit chewy. This has something to do with the humidity created by a woodburning oven. It's occasionally advised that one put a pan of boiling water on the bottom of the oven (this would make cleanup easier as well), but I've never tried it.

Here we now have some very good frozen pizze, which is what I get when I want one. Not as good as the pizzeria variety, but not bad.
