This flaky bread recipe is from Alison Roman at Bon Appetit, it is simple and easy to make. She developed this recipe to mimic the flaky bread at Brooklyn's Glasserie

Ingredients (for ten rounds)
1 tsp. Kosher salt
3 cups all-purpose flour (plus more for surface)
6 tbsp of unsalted butter(melted)
10 tbsps of unsalted butter for brushing
Olive oil (for parchment)
Flaky sea salt (such as Maldon)

Whisk kosher salt and three cups of flour in large bowl. Drizzle in melted butter, mix well. Gradually mix in 3/4 cup of water. Knead on lightly floured surface for 5 minutes. Wrap in plastic and let rest in warm spot for 4 hours. Divide dough into ten pieces. Roll into balls. Let rest for 15 minutes. Roll out dough into thin rounds, brush with butter. Roll into ropes and then make a tight coil of the rope. Roll out again into rounds about 1/8" thick. Stack rounds and separate with oiled parchment paper. Heat a large cast iron griddle or skillet over medium high heat. Brush round with butter, both sides, and cook on griddle until lightly blisterd and cooked through, about two minutes. Transfer to wire rack and sprinkle with sea salt.

Alison advises that you can freeze the final prepared rounds and when you want to eat flaky bread, pop out of the freezer and on to the griddle and enjoy. So there you go, simple bread, good with all soups, easy to make. If you do not have flaky sea salt you are missing a kitchen basic.
