The fish is good for you, but the breading is a killer. Buy only fresh, wild fish and make sauces. Use butter, Ghee, olive oil, walnut oil, truffle oil, MCT oil, lemon, garlic, wine, shallots, onion, fennel, thyme, oregano, Old Bay, salt and pepper what ever other spices you like. Cut the fish into chunks and fry for a couple of minutes in your favorite oil with a little added butter or Ghee, (you don't need to cook it any longer than that), set this aside covered with aluminum foil, add a bit more butter and favorite oil and make a sauce with what ever you like to taste and serve it over the fish.
