JIT delivery always seemed risky to me... everything has to work perfectly in that system, forever... or it begins to fall apart quickly.

Actually not really. There is as much risks in having a warehouse full of components, let alone the costs of storage. Its a matter of setting up the supply chain so that the risk identified are reduced or eliminated.
