Super brief description. You marinate a chicken for at least 6 hours (there is a traditional Chinese marinade with soy sauce and 5 spices, but you can make your own). And you optionally stuff the chicken (also various recipes). Then you wrap the chicken in a few large lotus leaves and tie it up with twine (some people add additional layers of wrapping on top of the leaves - newspaper, plastic, parchment). Then you wrap the whole think in clay/mud. Bake the whole thing ~3 hours. The chicken will have cooked in its own juices and clay and wrappings do a good job of evenly and mildly distributing the heat.

You will need a hammer or tools to break up the baked clay and an addition dish to transfer the bird to. The flesh should just separate from the bone as you pick it up. Serve with rice and gravy.
