I have also given up all bread.

For the most part, I have too. My husband and I have been on the Plant Paradox diet for 2 years now and my AC1 level went from 5.9 to 5.3 in one yr. My glucose reading went from 107 to 101.

I really missed bread, so I found this recipe and it's a great substitute. We have one every night with our salad. Other than being delicious, the best part is, this muffin contains no grains.

1 1/2 cups fine almond flour
1/3 cup grated Parmesan cheese
1 T baking pwd (aluminum free)
1/2 t garlic pwd
4 T melted butter
2 eggs
1/3 cup sour cream

Mix first 4 ingredients in a bowl. Mix the next 3 ingredients in another bowl. Mix the two bowls together till moist and bake at 400 degrees for 12-14 minutes in a 12 muffin tin that has been greased. (I use avocado spray that I buy at Costco.

I also allow myself 1 oz of this chocolate a night. The author of the Plant Paradox recommends eating 1 oz of chocolate that is 72% or higher cocoa. I also eat one Medjool date with my chocolate every night.

Really happy with my last blood workup.

P.S. Eat a lot of fish too. All meat (grain free fed if at all possible...........pasture raised) in small quantities.
