<<Does anybody know how many fishermen there are in the US & Canada? Just taking a wild guess I would say that the total market for the games is about 25MM>>

Wow, not bad for a wild guess! The US Fish and Wildlife Service says there are 30 million freshwater anglers. Here is an interesting quote:

"Black bass (including largemouth, smallmouth, and spotted bass) appealed to more anglers than any other fish the Survey covered. Of the 30 million freshwater anglers in the U.S., 12.9 million, or 43 percent, fished for bass. Overall patterns show bass anglers tend to be male, have above-average incomes, and live in southern and urban areas."

Note that trout fishing, with 9 million participants, is almost as popular as bass fishing. And the trout anglers have much higher incomes. So how about a premium-priced Radica trout fishing game?
