I am sorry to hear that the new Music app isn't up to the task for managing your media files like iTunes used to be.

If Apple doesn't start fixing it in Big Sur, I'll probably keep my old 2011 iMac running High Sierra as a media server. Might try out Plex then and see how that goes.
