I made this recipe for an African Children's Choir that stayed at our house almost a decade ago. While they preferred the BBQ chicken, my family fell in love with this dish. Here's the recipe:
Spicy African Sweet Potato Soup
1-Tsp Olive Oil 1-Small Onion-chopped 1-Large Sweet Potato (huge) Peeled and Diced into 1" cubes 1-Clove Garlic, minced 4-Cups Chicken Broth 1-Tsp dried Thyme 1-Tsp Ginger, fresh minced or dried 1-Tsp Paprika 1/2 Tsp Ground Cumin 1-Cup Chunky Salsa, any type 1-15.5 oz. can Garbanzo Beans, drained 1-Cup diced Zucchini, seeds removed 2-Cups Cooked Rice 1-1/2 Tblsp Creamy Peanut Butter
1. Heat oil in saucepan over medium heat. Saute onion, then add and saute garlic.
2. In a Dutch Oven, add chicken broth, spices, sweet potato, and onion and garlic. Bring to a boil, then simmer for 15-minutes. Cook rice in another pan or Instant Pot while this is happening.
3. Stir in the Garbanzo Beans and Zucchini. Simmer for another 15-minutes.
4. Puree soup with a hand blender or conventional blender.
5. Add Peanut Butter, Salsa, and Rice. Ready to Serve.
I don't have the nutritional info on this, but it is known to add about 20-years to your life and somehow makes anyone who eats it Tantric for 2-weeks. We usually double the recipe, as it goes fast. |
