Do you know the salaries of starting PhD's in the STEM fields??

Typically in the $120k - $140k range but varies widely by region and discipline. That wasn't my point though. A lot of smart people don't do engineering because they know over the long haul they'll make more money with a lowly business degree. The STEM folks salaries are limited mainly due to H1B's. If H1B's were limited to finance/sales/marketing disciplines the smart folks would opt for engineering over business degrees. Most of my wealthy friends have business degrees and none of them are engineers. Yes there are exceptions...
