what is the scientific reason they grow so big?

Slow steady rain. In Seattle / Canada the rain is steady, but it's actual raindrops. Raindrops fall to the ground. The tree has to pull that water from it's roots to the tip of the top. In California it is a heavy fog that is forced upward by mountains where it sets as dew. The dew evaporates on the needles and that evaporation creates a vacuum in the tree's vascular system and allows it to pull water and nutrients even higher.
