my daughter's favorite Oatmeal BREAD RECIPE

sunflower seeds or chopped walnuts can be added if desired.

** this recipe is easy and does not get crumbly and stale quickly
like some other homemade breads **

1 pkg dry yeast
1/4 cup warm water (110 degrees)
1/4 cup molasses
1/4 cup butter
2 tsp salt
1/4 cup lightly packed brown sugar
2 1/2 cups oats
1 cup each boiling water and cold water
about 5 cups flour (1/2 whole wheat)
3 tablespoons milk

combine yeast, warm water and 1 T. of molasses. let stand until foamy - about 5-10 min.

combine butter, remaining molasses, salt, sugar, 2 cups of oats and boiling water.

stir until butter melts. add cold water and yeast mixture. beat in 4 cups of flour a little at a time.

sprinkle 1/2 cup flour on board. knead dough for 15 min, add more flour to prevent sticking.

place in greased bowl, cover, place in a warm place and let rise until double.
punch down, divide into 2 loaves.

place in greased 9 by 5 pans.

soften remaining oats in milk - dot onto loaves. cover. let rise until double.

bake at 350 about an hour or until bread sounds hollow when tapped
