Tuscan Salmon recipe we invented & prepared tonight was fab:

fresh Salmon poached in a covered 12-inch frying pan with chopped fresh spinach
and with California sun-dried tomato slices, cooked in:

a freshly grated parmesan & small amount of heavy cream & light amount of olive oil sauce
including very small amounts of seasoning to preference including some fresh or dried mint and/or basil.

We served it with brown rice and poured the small amount of sauce remaining in the pan over the rice.
One of the best Salmon recipes we have ever enjoyed at home or dining out

took about an hour to prep & cook, and we cooked it under low heat for
all the ingredients added to the frying pan in one shot, and then covered the pan to accomplish
moist and medium-rare Salmon texture with the spinach not overly wilted.
