off topic reply to AJ - you happen to have a tried & true recipe for a bone-in pork roast?

I normally elevate the roast on a rack within a 4-inch sided stainless turkey roasting pan, with
1/2 inch of water underneath the rack for moisture

any ideas are welcome ... have some of my own, but want to try something AJ style, if any exists

fyi - the store is going back to March through July status from 2020 ...

large bags of rice, grains, flours, beans mostly sold out .... many common canned goods mostly sold out

we purchase all our brown rice, basmati brown rice, and sushi white rice at this store ... and none
of that was in stock except for two 10-pound bags of basmati brown
