rimshot, I never seem to have had good luck with pork roast in the oven, and I've even cooked it just like you are. However, I've had some stunning results with pork in an Instant Pot.

I've got some boneless pork lion I paid $0.99/lb. for that I'm going to cook with this recipe tomorrow (I was going to do it tonight, but everyone's gone!).
