AJ, I was just telling my bestie that I'd bought close to 50 lbs of boneless skin off pork shoulder on the weekend. It was a bargain at 1.99/lb. Felt like I was lugging my hunt out of the grocery store lol!

I've proceeded to cut 20 lbs of it into strips and so made the char siu twice with 10 lbs each. Yes, admit I must've sprained my wrist somewhat last night after slicing up 10 lbs of char siu :)

I've done it with bone-in pork shoulder also. All you have to do is take out the trusty knife/cleaver, remove the bone and voila! I have this thing about playing butcher and deboning meat, but that's probably a story for another time!

Bone is saved in the freezer until a full bag of bones goes into the InstantPot with a head of garlic and a splash of wine vinegar. That's the best bone broth/soup base.
