I remember a college kid about 12-years ago who was an early internet social media promoter. He was doing events and funding them out of his own pocket. He said he was only eating foods that were white because they were cheap (rice and oatmeal).

You can get a full day's worth of protein, calories, and fiber just by eating oatmeal. Add in some vitamins, and you're there.

He said the hardest thing was the blandness of the food day in and day out.

I agree with you. When tired parents come home exhausted from work, it's a lot easier to put on some pizza rolls, chicken nuggets, or frozen pizza. I think this is more of a problem with single parents and 2-income households who are at 2x the poverty line or less.
