" the freedom to make one's own heatlh care decisions"

Putting aside the whole abortion thing, you are free to make decisions, and you are also free to accept the consequences. That might mean losing your job, being denied entry into a basketball game, paying for your own health insurance, or not getting an organ transplant. Freedom of Consequences is not covered by the 1st Amendment.

"Yes, he was free to quit. Is that freedom? "
Yes.

"Doctors and nurses having to walk away from places they've worked for years or decades is not 'freedom'".
Sure it is. They don't have to walk away. They can get vaccinated. They just can't have their cake, and eat it
too.
