my personal goal for consuming fresh vegetables this week
is focused on consistently eating the items named below, along with
the usual daily fresh spinach / salad greens with fresh cilantro & thyme
and eating cooked kale:

- 2 tomatoes per day - have 12 currently on hand
- 1.5 avocado per day - have 10 currently on hand
- freshly home made organic carrot juice from 6 carrots using our juice extractor
- 6 ounces of diluted beet juice every other day, chilled from the result of cooking red beets
- 2 red beets every other day, approx. 6 to 8 ounces
