Make slow cooker enchilada stack! damndelicious.net It really is damn delicious. It's super easy to make your own enchilada sauce- do it! You don't even need broth- water works just fine. One of the family's favorite meals- and the leftovers are fabulous with scrambled eggs. You can also make this with shredded chicken, tofu, seitan or just cheese! You're welcome :-) (Takes 2 hours to cook in the slow cooker- add on to that prep time of about 1/2 hour or less)
