Everyone loves their "Mr. Tikka" vegetarian pizza. I have no idea what paneer tikka is (I know it is a type of feta cheese) but it tastes good. The stone is pretty cheap and helps with keeping the crust crisp. But you are right that it is not essential. Steel will do fine, especially if you add in some semolina to prevent the dough from sticking, which you should be doing anyway.
