I used to make that kind of cheese at home (with lemon juice). But his seems different. For starters, it really doesn't melt. I think his shredded butter chicken is a bit softer than this "soft" cheese (not that it is hard. I am just saying that it holds its own). Also, his has some spicy and smoky flavor to it. Next time I see him, I will ask if he makes it himself or buys it.

Speaking of cheese, when I was in Morocco, there were cheese shops that made their own fresh cheeses. Turns out that you can buy a cheese making machine the size of a small mini fridge and make your own cheese. It was interesting. I had not had that fresh of a cheese since I stopped making my own.
