My previous landlady is a wild food forager. She would laugh in your face on production of such material, she takes great care to keep away from any area that might have been treated or sprayed.

Rather then getting the likes of Bill Gates and his crew to make steaks out of sewage, an extreme form of the current trend to "improve" things, there is already a process that has been around for a few billion years that already has it down pat. Carefully and thoroughly tested and refined over the eons, and already out there in the field.

"Improve" upon it at ones folly.

I dont make bread these days, off the menu as I like it too much, but when I do, I usually use flour made from Spelt grains

Sure, it doesn't have this in it or that, not so good in this situation, or that. But if the producer is selling the real stuff, there is a quality record that goes back a while.
