just think how many cash jobs in high tax states happen to avoid paying taxes.... I've heard of it being done here in Taxifornia for dental work to home construction and remodeling. It wouldn't surprise me to learn restaurants do a lot of "extra hours" with all cash to avoid payroll and other taxes.
