I agree with you that rescue dogs seem to be special. I always had purebred hunting dogs but they all had their minor issues.
I got a rescue bloodhound and he didn't like people at first but once he realized we were good people, he was the most devoted and perfectly obedient dog I had ever owned.
I got a pound dog last year and he has been amazing from the time he got in the car to come home with us. I showed him our borders of the ranch and he has never strayed outside them. He's the biggest baby indoors but outside, he's as we nicknamed him on another thread here, "killer dog". He's taken down every possum, raccoon and armadillo on the property and a couple coyote. He's like Dr Jekyll and Mr Hyde.
I'll never get another purebred from a breeder again. I think maybe that being exposed to a bad environment, they know they have a good thing so they don't want to mess it up vs getting a puppy from a breeder, they just think that they can wander, push boundaries etc.
