If, like me, you are being inundated with tomatoes- here's an easy soup recipe I made up. I throw however many extra tomatoes I have (cherry toms I put in whole, big ones I rough chop)- about 4 cups- and water to cover in the crock pot with some leaves of basil- probably around 7 big leaves. I cook until the tomatoes are very soft- about 3 hours on high- put more water in if you need to. After the 3 hours I put in a can of coconut milk and curry powder, cinnamon, sugar and salt to taste. We like a hint of sweetness and we like to taste the cinnamon. Nutmeg also goes well in this. I use my immersion blender to puree it and then I serve it with small chopped avocado cubes floating in the soup. It's quite tasty.
