How did they prepare their long pig? Simple BBQ or Missionary Stew? Any surviving cook books or recipes from those days?

I was in a KFC in Whakatane a few years ago and watched a Maori guy, who must have weighed close to 400 lbs, order a large bucket of chicken and then sat down and devoured the whole thing. I was impressed. KFC is very popular, down your way..
