Easy dessert that's not too sweet and that will use up extra yolks- which I often have on hand if I've been baking. I use European Gourmet Bakery Organic Pudding Mix, Vanilla, because it has organic cornstarch so we can eat it safely.

Any cooked pudding mix will do (NOT instant ones)- and you add the yolks to make your boxed pudding richer. I cover the pudding with plastic (you must lay the plastic on the surface of the pudding so it doesn't get a skin)- and then to serve, crush graham crackers and cover the top of the pudding in the individual bowls and then dot the pudding with very thinly sliced banana. It's so good! A drizzle of caramel sauce won't go amiss either or chocolate sauce if you prefer.
